3 Healthy Comfort Food Recipes to Make This Fall
As festive holidays approach and seasonal comfort foods make their way back into our hearts and bellies, Milestone Retirement Communities shares some of our favorite healthy comfort food recipes for fall. Whether your Milestone Retirement home has a full kitchen or you’re working with a microwave, these easy recipes are simple, tasty, and hearty.
Hearty Veggie Chili
Skip the mess and all the extra appliances with this delicious, chunky, and comforting chili recipe. All you need is a can opener, a big mixing bowl, a microwave, and a few key ingredients:
- 1 15-oz can black beans, rinsed
- 1 15-oz can petite diced tomatoes
- 1 15-oz can kidney beans, rinsed
- 1 4-oz can diced green chiles
- 1 packet pre-made chili seasoning
Mix all your ingredients together in a large bowl until fully incorporated. Taste test and add salt and pepper for more flavor. Portion out a serving into a microwave-safe dish and heat in the microwave for 1 to 2 minutes, stirring halfway through. Top with a sprinkle of shredded cheese or a dollop of low fat sour cream if you’d like. Let cool for 1 minute before enjoying.
Snickerdoodle Mug Cake
Have a hankering for something sweet? With this warming dessert, you’ll be making a unique, microwavable dish that’s halfway between a snickerdoodle cookie and a cake. While less on the healthy side, this single-serving dessert is perfect for practicing moderation. Mix together all the ingredients into a large coffee mug and microwave for 1 to 1.5 minutes. Cool for a few minutes before spooning a bite from this heavenly sweet treat.
Garlic-y Green Beans
For this straightforward recipe, you’ll need 1 pound of washed, fresh green beans, a large microwave-safe dish with a lid (or microwave-safe plate as a cover), and a few additional ingredients:
- 1 tablespoon butter, cut into smaller pieces
- 1 cup water
- 1 garlic clove, peeled and crushed or mashed
- ¼ teaspoon ground cumin
- A pinch of sea or coarse salt
Toss all ingredients together into a microwave-safe bowl and mix well. Cover with the lid or microwave-safe plate and microwave for 6 minutes. Let cool for 1 minute before checking the taste and tenderness. Be careful removing the plate/lid – it will be very hot.
