3 HEALTHY & REFRESHING SUMMERTIME SNACKS TO ENJOY

Treat yourself with a delicious and refreshing summertime snack. From apple dip to crisp corn and baked zucchini, these summertime recipes that use seasonal produce are good for the body and the spirit.

1. Fresh Corn Salad

Inspired by Ina Garten’s Food Network recipe, this corn salad is the perfect balance of savory, tangy, and sweet – and it takes just over 10 minutes to make. In a microwave-safe bowl, empty the contents of 15-ounces of fresh or canned sweet whole kernel corn, sprinkle with some salt and pepper, and zap for one to two minutes, stirring halfway through.

Remove from the microwave and drizzle in 3 tablespoons of red wine vinegar and 1 tablespoon of extra-virgin olive oil. Dice half a red onion and mix together. For extra flavor, follow Ina Garten’s recipe and julienne a few sprigs of basil to garnish before serving. This recipe serves four to six people and can keep in the fridge for up to five days.

2. Oven-Baked Zucchini Chips With Low-Fat Dip

For a heartier, yet still healthy, snack or side dish, these zucchini chips are great. You’ll need one fresh zucchini, cut into sliced rounds. Take a dry paper towel and press onto the zucchini slices to remove some moisture. Sprinkle a little small bit of panko bread crumbs and parmesan cheese over the top of the sliced zucchini on a baking sheet. Bake at 425 degrees for about 8 minutes. If you like a softer bite to the zucchini leave it in for a total of 10 to 12 minutes.

While the zucchini bakes, dollop 4 tablespoons of low-fat sour cream into a small bowl. Add one tablespoon of filtered water, a dash of garlic salt, and a sprinkle of smoked paprika. Stir together with a small whisk or a fork until well incorporated. Once zucchini is done, let cool for a few minutes before serving with the dip. This recipe easily serves two and any leftovers can be stored in the fridge for up to three days.

3. Apple Dippers

This refreshing treat is just what your summer needs. Pick your favorite apple to pair with this creamy, peanut butter dip – honeycrisp and granny smith apples are an excellent choice. In a small bowl, you’ll mix together 1 cup of unsweetened Greek yogurt with 4 tablespoons of creamy, natural peanut butter. Drizzle with a tablespoon of honey or mix it directly into the bowl with the other ingredients for a more unified flavor.

Chill in the fridge for at least 30 minutes prior to serving. Meanwhile, cut your apple into quarter-inch slices, lay out onto a plate, and sprinkle with some cinnamon. Feel free to just dig right in, using your apple as a spoon and dunk each bite into this creamy, healthy dessert dip. Keep the remaining three or four portions as leftovers in the fridge for up to five days. This treat is perfect as a low-calorie dessert.
