Chicken Fajitas (GERD-friendly)

Makes 6 Servings

GERD-Friendly Chicken Fajitas Ingredients:

For the Marinade
1/4 cup lime juice
2 TSP garlic powder
2 1/2 tsp ground cumin
½ TSP Mrs. Dash Seasoning

For the Fajitas
2 chicken breasts, boneless, skinless; cut into strips
3 tbsp canola oil
3 onions, thinly sliced
1 ½ TSP Garlic Powder
1 ½ red sweet peppers, cut into thin strips
½ TSP Mrs. Dash Seasoning
¼ TSP ground pepper
8 low fat flour tortillas
1/3 cup non-fat sour cream
1 TBSP fresh cilantro

Directions:
1. In a bowl, whisk together the lime juice, garlic powder, cumin, & Mrs. Dash seasoning. Place
marinade in a zip lock bag or bowl, along with the sliced chicken, & allow to marinate overnight.
Discard marinade afterward.

2. Heat oil in a skillet & saute onions, peppers, & garlic together. Add marinated chicken to the
skillet, season with Mrs. Dash & pepper, & cook until chicken is cooked fully through at 165
Degrees F.

3. While the fajita filling is cooking, place tortillas in a warm area for service.

4. Place approximately a 1/3 cup of fajita filling in each warm tortilla, & top with a dollop of sour
cream & a pinch of cilantro for garnish.
